Wynn Big By Going Vegan
Steve Wynn, owner of Wynn Resorts, has gone vegan. Well, that’s the rumor anyway.
This is BIG news here in Las Vegas.
“The restaurants [at Wynn and Encore] are behaving as if the man in charge would like vegan options on his menus,” reports the Review Journal. The newspaper continues:
Special vegan dishes include Fava Bean Puree with sautéed hon shimeji mushrooms, snap pea salad and aged balsamic vinegar at Alex and the Market Chopped Salad with avocado, carrots, celery, pumpkin seeds, edamame and tarragon vinaigrette at Society Café Encore. Hearty entrée options—such as the Summer Vegetable Gratin at Botero, Risotto con Verdure di Stagione, risotto whipped with seasonal vegetables at Bartolotta Ristorante di Mare, and Napoleon of Savory Tofu with ratatouille and fried eggplant at Tableau—entice vegan and non-vegans alike. The Country Club excites palettes with a vegan version of their popular Watermelon Gazpacho with avocado, jicama, tomato, cucumber, cilantro and yucca crisp, while Stratta offers Whole Wheat Pasta Primavera, a vegan take on the Italian American staple.
SW, Wynn’s signature steakhouse, serves crave-worthy vegan dishes such as Grilled Royal Trumpet Mushrooms with creamy polenta and shallot balsamic sauce.
Wazuzu’s Vegan Crunch Roll with crispy asparagus, avocado, cucumber and arare, Okada’s Vegan Cold Soba Noodle and Wing Lei’s Crispy Tofu with sugar pea, water chestnut, carrot and bean sprout feature flavorful Asian ingredients. Decadent desserts such as Blueberry Cobbler with toasted almond ice cream at Sinatra and Banana Crepes with coconut ice cream, avocado mousse at Switch provide a sweet close to any meal.

Several executives in Wynn’s inner circle have followed his lead and embraced veganism as well, sources said.
He’s not the only vegan in Vegas. Another recent celebrity vegan who lives in the valley is Mike Tyson. And plenty of local poker players are vegan, too. For example, respected poker author Ed Miller* and PETA member Annie LePage are both Vegas vegans. Here is a video of Annie:

Great article and more important is the exciting information in the article. Steve Wynn makes the first move forward to making vegan dishes available at all his restaurants. Know longer have to call 24 hours in advance to request a vegan meal, you can dine at any of his restaurants and have a delicious vegan meal. Harrah’s & Aria are following suit, best news I have heard in my 20 years living here. Lets hope the rest of the Strip follow suit.
This is good news! Now I wonder if meals at Steve Wynn’s restaurants are expensive or easily affordable for most people. Are they “upscale” or casual?
As a vegan chef and educator for the past twenty years, this is good news. When large scale restaurants and high profile people get on the vegan page, it helps a lot. The menu items look creative as well. Sometimes people fall into the boring vegetable plate trap… so kudos to Steve Wynn and to more vegan items in Las Vegas.
Fritz – all the casinos have a combo of restaurants. Since he’s making sure every restaurant has at least one vegan option, everyone should be covered.

I am so glad to hear Steve Wynn has gotten on the vegan bandwagon. I hope the diet will help his eyes. I no longer need reading glasses, after 8 months!
