What I Ate Last Week
There are vegan bloggers who show what they eat in fantastic, beautiful photographs. Some vegan bloggers even post recipes. But I’m just going to do it the simple, old fashioned way. I’m going to tell you what I ate this last week.
Before I get into the nitty gritty descriptions of my food, let me just say that this is not “the vegan diet.” This is just some vegan food that I eat. Another vegan might eat completely differently from me. In fact, most vegans do eat differently from me.
There’s so much variety within the category of vegan food that none of us eat exactly the same way. Even the vegans I live with eats differently from me.
Without further ado, here is what I ate this last week:
Monday
- breakfast: oatmeal with agave syrup, coffee with soy milk creamer
- snack: apple
- lunch: two peanut butter and jelly sandwiches, fruit salad
- snack: small serving of rice and beans that were leftover from the dinner the night before
- dinner: vegan sushi (veggie rolls, avocado rolls, inari, edamame)
- desert: a vegan candybar called Mahalo that tastes like an Almond Joy
Tuesday
- breakfast: oatmeal with maple syrup, coffee with soy creamer
- lunch: vegetable soup and a salad, juice and seltzer
- snack: toast with almond butter
- dinner: baked potatoes with salsa, steamed mixed veggies, water
Wednesday
- breakfast: oatmeal with maple syrup, coffee with soy creamer
- lunch: lentils, rice, green salad, juice and seltzer
- snack: soy yogurt in a key lime flavor
- dinner: red beans and rice, steamed mixed veggies, salad
Thursday
- breakfast: oatmeal with a banana, coffee with soy creamer
- snack: apple
- lunch: tacos with beans, rice, salsa, lettuce, and spices inside
- snack: strawberries
- dinner: steamed squash, spaghetti, juice and seltzer
Friday
- breakfast: oatmeal with agave syrup, coffee with soy creamer
- snack: apple
- lunch: quesadillas with vegan cheese (daiya - it melts!) and rice and beans
- snack: vegan mocha Frappuccino from Starbucks (to make it vegan, order it with soy milk and no whipped cream)
- dinner: curried potatoes and peas, green salad, juice and seltzer
So… what vegan food did you eat?


Ooh~ I love all the mexican flavor in your dishes~~ what spices did you use for your Thursday lunch? I know they have pre-made packets, but didn’t know if they were suitable or not, and if not, what spices you chose ^.^
Last night was pasta shells topped with sauteed Tofurky Italian links, onions, garlic & olive oil, along with fresh chard, basil & tomatoes from our garden. Nutritional Yeast sprinkled on top

Some packets are suitable for vegans. They will say “vegan” or you can just read all the ingredients.
I grew up in California so I don’t think of tacos, burritos, rice and beans as “Mexican.” I think of them as normal
Love it! Nothing fancy, just normal food. Being vegan isn’t odd, it looks pretty normal by this list.

I love the juice and seltzer idea!
i’ve been trying to come up with something aside from tea and juice and the seltzer adds a nice little change.
