Tofu And Potato Scramble Recipe
This is a simple, tasty breakfast scramble that is a great way to start the day, complete with protein, carbs, iron, and B vitamins.
This recipe serves 2-4 people and can be paired with slices of fresh fruit or toast with jam for a tasty, complete breakfast.
Here is the recipe, created by Ed Miller:
Ingredients:
1 brick firm tofu
1 Tbsp. nutritional yeast
oil (olive oil or safflower oil)
coconut oil
1/2 bunch spinach, chopped
1/2 onion, chopped
1-2 cloves garlic
1 medium potato, thinly sliced
Spices:
1 tsp. curry powder
1 tsp. salt
1/8 tsp. cayenne pepper
Directions:
1. Coat large pan with oil and put stove on medium/med-high heat
2. Rinse/drain tofu brick
3. PAT TOFU BRICK DRY
4. Crumble tofu into pan and cook until golden on all sides ~10 min
5. Add yeast and coat tofu
6. Add splash coconut oil
7. Add all other ingredients and cook until potatoes are soft ~8 min
Remember: Stir regularly to avoid sticking to bottom of pan
