  1. Is this the guy who says to eat vegan until dinner and then eat whatever you want? And is he related to Caldwell B. Esselstyn?

  2. Oops. I just watched the video, and he does mention his father having a bunch of research about heart disease, so I’m assuming it is Caldwell B. Esselstyn.

  3. This is Rip Esselstyn, son of Caldwell B. Esselstyn, author of Engine 2, firefighter and athlete. He promotes a low-fat plant-based (vegan) diet for health reasons. He calls it “plant strong.”

The “vegan til dinner” guy is Mark Bittman.

  4. Sweet! The Today Show. Love it!!! Get that vegan diet out there :)

    Cheers,
    Kristen
