Low-Fat Vegan Zucchini Bread
This recipe has no added fat (oil) and no cholesterol (because it’s vegan). Although it’s a sweetbread and thus has plenty of sugar, this recipe contains lots of healthy things like whole wheat, applesauce, and of course, zucchini.
5 Tablespoon ground flax seeds
½ cup warm water
2 cups vegan sugar
1 cup applesauce
1 tsp vanilla
2 or 3 zucchinis, grated
2 cups all-purpose flour
1 cups whole wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons pumpkin pie spice
Preheat the oven to 350 degrees F and lightly grease the loaf pan(s).
Mix together flax seeds and warm water. Add sugar, applesauce, and vanilla and mix well. Then add grated zucchini and stir.
In a separate bowl, sift together remaining dry ingredients. Add dry mixture to wet (or vice versa) and stir well, but quickly. Do not spend extra time mixing, just give it a couple good stirs.
Divide batter between prepared loaf or miniloaf pans. Then bake for 45-55 minutes (less time for mini loaves, more time for regular sized loaf pan), or until toothpick inserted in center of loaf comes out clean.
Let cool a few minutes before removing from pans and slicing.
