Sam - Beans and rice are very healthy and have sustained generations. Same goes for corn and potatoes. Rice, corn, or potatoes have all played major roles as the PRIMARY food source for many human civilizations.

As for peanut butter and jelly - these items are generally cheap enough that you don't have to buy the stuff that has added sugar. Peanuts are the least expensive nut around.

Lastly, starch is not the enemy. Our bodies are built to work on starch. Just keep it to complex carbs like brown rice and potatoes, not simple carbs like sugar.

I recommend:

Good advice, but the first remark on buying "Beans and rice, peanut butter and jelly, potatoes, corn" is questionable - those foods are only good in moderation and not particularly healthy by themselves, especially coupled with the "generic" stuff (buying generic peanut butter, for instance, is a good way to get added sugar and fully hydrogenated oil); the same with jelly - high fructose corn syrup will cost more later with a lifetime of diabetes. Shopping in season and buying produce (real produce, not canned corn) locally are great tips. In general, a "whole foods" approach without relying on the trademark high-starch veganism that many new vegans pay homage to, is a prudent course.
