The Vegan Soapbox has some pretty extensive archives by now. But many readers have barely scratched the surface. So, let’s dig a little deeper and pull out some oldies, but goodies.
Today the theme is food.
Get an idea of what vegans eat by browsing photo diaries and video compilations. One of the best ways to understand a plant-based diet is to see the foods that vegans and vegetarians eat. There’s just something about seeing it that makes it more real, more available, more easy.

Here’s a Simple Vegan Recipe for Spinach Soup with Asparagus and Quinoa. You get some calcium in the spinach and protein in the quinoa, plus plenty of taste from the garlic. Yum! How about coupling that with a nice salad and dressing? Even better!
