Cubed Sweet Potato Fries

Cubed Sweet Potato Fries

Preheat oven to 375 f
Prepare rimmed baking sheet by greasing it

1 Tbsp packed brown sugar or other dry sweetener
1/2 tsp ground ginger
1/2 tsp curry powder
1/2 tsp salt
1/4 tsp ground allspice
1/4 tsp ground cardamom, optional
1/8 tsp cayenne pepper
3 sweet potatoes (about 8 oz ea), peeled and cut into 1-inch cubes
3 Tbsp olive oil
1 lemon, halved, divided

1. In a small bowl, combine sugar, ginger, curry powder, salt, allspice, cardamom, and cayenne pepper.
2. In a bowl, toss potato cubes with oil until evenly coated. Squeeze the juice of one lemon half over the mixture and toss well. Sprinkle with spice mixture and stir to coat evenly.
3. Spread potatoes in a single layer on prepared baking sheet. Bake, turning cubes twice, for 40 to 4 minutes or until evenly browned outside and tender inside. Squeeze juice of remaining lemon half over potatoes and toss gently before serving.
