Cooking & Baking Without Eggs
Here is a list of your options. Choose the one that makes the most sense for the recipe:
- Simply omit the egg and forget about replacing it.
- Use a commercial egg substitute product like Ener-G egg replacer.
- Ground up flax seeds.
- Mashed banana.
- A little soy milk curdled with vinegar.
- Soy yogurt.
- Tofu.
- Applesauce.
- Nutritional yeast.
- Mashed cooked chickpeas.
- Water and baking powder.
- Mashed potatoes.
- Agar powder.
- Canned pumpkin.
- Cornstarch.
- Arrowroot.
- Purreed prunes.


I read recently that 1 tablespoon ground flax seeds soaked in 3 tablespoons water (let sit until it gels), will replace 1 egg.

Many of my friends are vegan and I
see them struggle quite a bit with
eliminating eggs.
