Cooking & Baking Without Eggs

Here is a list of your options. Choose the one that makes the most sense for the recipe:

  • Simply omit the egg and forget about replacing it.
  • Use a commercial egg substitute product like Ener-G egg replacer.
  • Ground up flax seeds.
  • Mashed banana.
  • A little soy milk curdled with vinegar.
  • Soy yogurt.
  • Tofu.
  • Applesauce.
  • Nutritional yeast.
  • Mashed cooked chickpeas.
  • Water and baking powder.
  • Mashed potatoes.
  • Agar powder.
  • Canned pumpkin.
  • Cornstarch.
  • Arrowroot.
  • Purreed prunes.

  1. I read recently that 1 tablespoon ground flax seeds soaked in 3 tablespoons water (let sit until it gels), will replace 1 egg.
