Chocolate Chocolate Peanut Butter Vegan Ice Cream

For the Summer, I bought a small, manual ice cream maker. In fact, it’s just a ball with two compartments. One compartment is for ice and rock salt, the other compartment is for the ice cream ingredients. It’s called The Ice Cream Ball. To make the ice cream, you just roll the ball around, shake it, or pretend it’s a medicine ball and do some exercises. It’s a lot of fun and a really easy way to make ice cream.

You don’t need an ice cream ball to make vegan ice cream, all you need is a good recipe and any ice cream maker or just two plastic bags, one large and one small. Here’s the recipe for a tasty vegan ice cream I made the other day:

Chocolate Chocolate Peanut Butter Vegan Ice Cream

Ingredients

  • 1 & 1/2 cup soy creamer
  • 1/3 cup sugar
  • 1/2 cup chocolate chips
  • 3 tablespoons cocoa powder
  • 2 tablespoons peanut butter
  • 1 teaspoon vanilla extract

Directions

  1. Mix all the ingredients together and put into the ice cream maker or into the small bag
  2. Fill the ice portion of the ice cream maker with ice or fill the large bag with ice
  3. Add 1/2 cup rock salt to the ice
  4. Turn the ice cream maker on or put the small bag into the large bag
  5. If using bags, shake the bags for 10-20 minutes
  6. Enjoy your tasty vegan ice cream!

  1. Wow! This is so clever! I have been despairing because I have a 1950s hand-crank machine that just won’t crank anymore. I bet this would work with some good tupperware too. Maybe a smaller one filled with the ingredients put inside a larger tupperware filled with ice and salt in the larger one. I am definitely going to try this. Today!

  2. I’m wondering - why soy creamer over regular old soy milk?

  3. Caroline,
    Good question!

The same reason to use half&half or dairy creamer rather than lower fat milk - it makes a more creamy ice cream. If you want a lighter ice cream, more like ice milk, you could use plain soy milk.

I’ve also seen recipes that call for soy milk and tofu to make it creamy. You could try that, too :)

  4. Here’s a non-dairy ice cream cookbook:
