Eccentric Vegan is a pen name for Elaine Vigneault. She likes the name “Eccentric Vegan” because it uses the same initials as her real name. And well, she’s also an eccentric vegan. Elaine’s been a vegetarian since 1982 and a vegan since 2007. She loves artichokes, avocados, fried tofu, sweet potatoes, lentils, and cranberry juice. Elaine doesn’t always play well with others. Convenient Vegan is Judith Lautner. She is the primary author of veganconvenient.com, a blog that focuses on foods that can be cooked easily and quickly, often using vegan convenience foods. One might be tempted to think of her also as “vegan when it’s convenient” and she’d admit there is a little truth to that. She is always vegetarian but at times she slips up in her veganism, sometimes for relatively good reasons but other times because she just slips. She has several blogs, the most active of which is her personal journal.
