Eccentric Vegan is a pen name for Elaine Vigneault. She likes the name "Eccentric Vegan" because it uses the same initials as her real name. Elaine's been a vegetarian since 1982 when she was only 6 years old. She has been vegan since 2007. She loves artichokes, avocados, fried tofu, sweet potatoes, lentils, and cranberry juice among other things. Elaine has been quoted in the New York Times in an article titled "The Carrot Some Vegans Deplore" and she was profiled in an article for the Las Vegas CityLife weekly newspaper called "Betting on Broccoli". Elaine organizes a group of vegans and vegetarians in Las Vegas called Vegas Veg*. The website is http://vegasveg.com. Elaine is a mom to four cats, two dogs, and one human.
