American Vegan Kitchen: The Quick Review

I will be testing several recipes from this new cookbook and will post a more detailed review later. For now, my initial impressions, after flipping through it several times and making one of the dishes:

* Most of the dishes use many ingredients. However, most of the ingredients are easy to find in any supermarket, and the recipes do not appear to require a chef’s knowledge to create.

* There are several recipes that call for deep-frying! Although this method of cooking is shunned these days you’ve got to admit it’s a part of the comfort food history and sometimes we just want that. Some of the recipes include instructions for making the dish in the oven instead, for a lower-fat version.

* Each recipe starts at the top of a page (except for those that are “sub-recipes”, included in the main recipe, like certain sauces and other condiments).

* This book is not simply a veganization of favorite comfort foods. Most of the dishes are creative re-creations that are healthier and more interesting.

* Something I always enjoy: the book includes recipes for spice blends, for seitan (more than one), and other staples you’ll want to make and keep on hand in the freezer or cupboard.

The one recipe I made, Smokey Cauliflower and Bean Soup, was delicious, filling, and healthy. I expect I will make it again. But first I want to try that Spicy Chocolate Pudding Cake.
